Welcome To The ...Ber Months!!!

By Danielle Carroll

Fall is a great time to cuddle up with comfy clothes, a cozy blanket, your favorite book, and comfort food!! Here is a recipe we make multiple times throughout the cold months. It is so tasty, even my son will eat it and he is a very picky eater. I hope you enjoy as much as we do. :)

Servings: 8

Each serving approximate: 286 calories, 7.5G fat, 22G protein, 28G Carbohydrates

6 - Ounces hot turkey Italian sausage 1 - Chopped onion 1 cup - Chopped red bell pepper 4 - Garlic cloves, minced 1 pound – ground turkey 1 – Jalapeno pepper, chopped 3 tbsp – Chili powder 2 tbsp – Brown sugar 1 tbsp – ground cumin 3 tbsp – tomato paste ½ tsp – freshly ground black pepper 2 tsp – dried oregano 1 tsp – salt 2 – bay leaves 2, 28 oz cans – no salt added whole tomatoes, un-drained and coarsely chopped 2, 15 oz cans – no salt added kidney beans, drained 1 can – black beans 1 can – pinto beans

Heat a large Dutch oven over medium-high heat. Remove casings from hot sausage. Add sausage, onion bell pepper, garlic jalapeno pepper, and ground turkey to the pan. Cook until sausage and turkey are browned, stirring to crumble.

Add chili powder, brown sugar, cumin, tomato paste, oregano, black pepper, salt, and bay leaves and cook for 1 minute, stirring constantly. Stir in tomatoes and beans. Bring to a boil. Cover, reduce heat, and simmer for 1 hour, stirring occasionally. Can add broth as needed for the consistency you like best.

Uncover and cook for 30 min, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese and chopped green onions.
